    Ingredients
    2 tablespoons butter
    1/2 pound diced ham
    2 ribs celery, finely chopped
    1 cup frozen chopped onions
    1 cup frozen chopped green peppers
    1 (14.5-ounce) can diced tomatoes with green peppers, celery, and onion (recommended: Hunt’s)
    1 (14-ounce) jar pasta sauce
    1 1/2 cups low-sodium chicken stock
    1 teaspoon salt
    4 dashes hot sauce, or more if needed
    1 1/2 cups converted long-grain rice (recommended: Uncle Ben’s)
    Directions
    In a medium saucepot, melt butter over medium-high heat. Add ham, celery, onions, and green peppers. Saute until celery is soft, about 5 minutes.

    Add remaining ingredients and stir until rice is evenly distributed. Bring to boil. Cover and simmer for 30 minutes, or until all liquid is absorbed.

    Basically the same way you do brown rice, it takes longer than white rice because of the husk.

    1/3 cup vegetable oil
    3 cups long-grain rice, rinsed*
    1 medium onion, chopped
    5 serrano chiles, or to taste, stemmed and seeded
    2 garlic cloves, chopped
    3/4 cup hot chicken stock, vegetable stock, or water
    3 cups warm Red Tomato Salsa, recipe follows

    How to Make Red Rice

    This is a Chamorro dish from Guam.

    * 4 cups of rice
    * 6 cups of water
    * 2 packets of achiote seeds
    * 1 onion, diced
    * 1 tablespoon of oil

    Boil 4 cups of water. Take packets of achiote seeds and brew them like tea in the boiling water.
    In a frying pan, sauté onions in the oil.
    Combine rice, achiote water, remaining 2 cups of water, and sautéed onions in a large pot or a rice cooker.
    If using a pot on the stove top: heat to a boil, reduce heat, cover and simmer approximately 20 minutes or until rice is tender. Do not remove lid while cooking.

    Tips

    * Instead of using achiote seeds, you can skip step 1 and just add 4 tablespoons of ground achiote (annato) along with 6 cups water, rice, and sauteed onions in the pot or rice cooker. Use more if you like it redder, less if you like it orange.

    Fry uncooked white rice in a bit of canola oil over med/high heat until brown. Add water to about an inch over rice. Add 1-2 Goya or Knorr tomato/e cubes. Simmer uncovered over medium heat until water evaporates and rice is tender. Add more water if needed, but not too much, so not to overcook.
